Fresh lime juice

Cilantro
2 tbsp(s), (plus extra for garnish)
Water

Sesame oil

Honey
2 tsp(s)
Ginger root
2 tsp(s), grated
Table salt
¼ tsp(s)
Cooked long grain brown rice
1½ cup(s), warm or at room temperature
Canned black beans
15 oz, rinsed and drained
California (Hass) avocado
½ item(s), diced
Red onion
1 small, finely chopped
Carrots
1 medium, shredded
Grape tomatoes
1 cup(s), quartered
Mango
1 cup(s), diced
Bell pepper
1 cup(s), any colour, chopped
Instructions

Put lime juice, cilantro, water, oil, honey, ginger and salt in a blender jar or mini-food processor; process until smooth.

To serve, toss rice with beans, avocado, vegetables, mango and dressing; garnish with cilantro.
