This Mexican-inspired breakfast bagel with fried egg and zesty black beans is a fiesta of tasty flavours.


Ingrédients
WW Plain bagel
1 bagel(s), split and toasted
Olive oil
½ tsp(s)
Egg
1 large
Chili powder
¼ tsp(s)
Canned black beans
¼ cup(s), drained and rinsed
Fresh lime juice
1 tbsp(s)
Pickled jalapeno peppers
2 tsp(s)
Lettuce
2 leaf/leaves, large
Tomato
2 slice(s)
Crumbled feta cheese
1 tbsp(s), finely crumbled
Instructions

Heat oil in small nonstick skillet set over medium heat. Crack egg into small dish; tip egg into skillet. Sprinkle with chili powder. Cover and cook for 2 to 3 minutes or until egg whites are just set for sunny-side up or until cooked as desired.

Meanwhile, mash together black beans, lime juice and jalapeño with fork or potato masher.

Spread black bean mixture onto bottom half of bagel. Top with lettuce, tomato, fried egg and feta cheese. Cap with top half of bagel.
