If you love everything bagels with tomatoes and scallion cream cheese, this inspired dish is right up your alley. It uses those beloved flavours in a fun new way with boneless, skinless chicken breasts. If the breasts you purchased are larger than 6 ounces, we recommend trimming them down so they’ll cook evenly (and in the time we specify). You can use the scraps for an easy stir-fry, a taco filling, or a quick addition to a grain bowl. Many brands of everything seasoning include salt and will provide enough seasoning here; if yours doesn’t, you’ll want to sprinkle a little salt on the chicken before dredging.

Uncooked scallions

Grape tomatoes
2 tbsp(s), finely chopped
Uncooked boneless skinless chicken breast
24 oz, 4 (6-oz) breasts
Everything bagel seasoning blend

Instructions

Preheat oven to 375°F. Line a sheet pan with foil; coat foil with nonstick cooking spray (or just coat a pan with nonstick cooking spray).

Place cheese in a small bowl; stir in scallions and tomatoes. Using a sharp paring knife, cut a horizontal slit through the thickest part of each chicken breast to form a pocket, cutting almost to but not through the other side. Divide cheese mixture evenly among chicken, stuffing into each pocket.

Spread seasoning blend onto a plate. Lightly coat top of each chicken breast with nonstick cooking spray; dredge top of each breast in seasoning, pressing to adhere. Arrange chicken on prepared pan, seasoning side up. Bake until chicken is cooked through and registers 165°F on a thermometer, 25 to 30 minutes.
