These lightly sweet and super-savoury sausage patties will be a hit at your next brunch party. Make them ahead and store in waxed paper to ease morning-of prep.

Uncooked venison (deer)
450 gm, ground
Minced onion
½ cup(s), finely grated
Granny Smith apple
½ cup(s), grated
Fresh sage
4 tsp(s), minced
Sugar
4 tsp(s)
Kosher salt
2 tsp(s)
Ground allspice
¼ tsp(s)
Instructions

Combine venison, onion, apple, sage, sugar, salt, and allspice in a medium bowl. Shape into 12 five-centimetre (two-inch) patties. Coat a large non-stick griddle with cooking spray over medium heat. Cook patties until lightly browned and cooked through.
